No Oil Vegan Pad Thai Recipe

A dish I eat often but never thought about making at home, until now. Super easy and simple. This will be added to you regular rotation of lunch and/or dinner dishes, any day of the week.

Ingredients

Approx 4 servings.

Sauce

  • 1/3 cup soy sauce

  • 3 ½ Tbsp brown sugar (I used an organic version)

  • 1 ½ tsp sesame chili sauce (original recipe calls for garlic chili sauce, but I couldn’t find it here)

  • 2 ½ Tbsp lime juice

Stir Fry + Noodles

  • 1 cup cubed extra firm tofu

  • 1/2 tsp chili flakes

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 cup bean sprouts

  • 1 cup chopped green onions

  • 1 small carrot, shredded

  • 1/3 cup chopped roasted salted peanuts

  • 8 ounces rice noodles or pad thai noodles, if you can find them

Extras for Garnishes

  • Extra chopped onions

  • Extra peanuts

  • Lime wedges

  • Sriracha

Method

  1. Pre-heat oven to 275 degrees and line your oven tray with a baking sheet or parchment paper

  2. Cube your tofu and place it on the oven tray. Let the tofu bake for 30 - 45 minutes or until brown and crispy (optional: turn tofu half way through).

  3. In a small bowl stir together the sauce ingredients. Set aside.

  4. Prep the remaining stir fry ingredients.

  5. Once the tofu cubes are done baking, add your noodles to a large pot with boiling water. Stir, cover and follow package instructions. I used rice pho noodles and this only took 2 - 3 minutes to cook.

  6. Once cooked, drain noodles and run warm water over them to prevent from sticking.

  7. Heat a sauce pan with 3 tbsp of water over medium-high heat. Add red pepper flakes, garlic, and soy sauce. Sauté with water, adding more if needed, until fragrant.

  8. Add the sauce and baked tofu into the sauce pan. Toss to combine gently.

  9. Add noodles, bean sprouts, shredded carrots, green onions, and peanuts and cook over medium-high heat, tossing occasionally (use tongs) for about 2-3 minutes or until the sauce has coated everything and the dish is hot.

  10. Serve hot for best taste adding in your choice of garnishes.
